Warm Comfort

As if getting food poisoning wasn't enough fun, The Smith Family Players have now been 
stricken with a lingering cold/malaise.

There is much sniffling, complaining, and moaning.

We needed to have some soup and fast.

Luckily, I had a recipe on hand that seemed to fit the bill and was relatively simple to whip up. Of course, I had to make changes to it.

Sorry.

I am cheap, but I am not easy.




Herb Tortellini Soup

2 Tblsp. olive oil
1 medium yellow onion, diced
1 cup diced peeled carrots
Freshly ground black pepper
6 cups chicken broth
20 oz. package fresh tortellini (I used three cheese)
1 cup frozen peas
2 teaspoons Italian seasoning
2 Tblsp. grated Parmesan for sprinkling

Heat olive oil in a large pot.
Add onion and carrots.
Saute until onions are translucent and slightly golden and carrots begin to soften.
Season vegetables with pepper.

Add chicken broth to pot.
Raise heat and bring to a boil
Add tortellini to vegetable mixture and return to boil.

Cook tortellini until just tender.
In the last 5 minutes add frozen peas and Italian seasoning.
Season to taste with salt and pepper, if desired.
Ladle into shallow bowls, sprinkle with Parmesan and serve.



Oh and while you are whipping up this beautiful soup, you can whip up some gorgeous bread to bake fresh and eat with your chicken soup. Take it from me, it will heal anything...absolutely anything.

I can't recommend using the Pampered Chef pizza stone, however.

Because this might happen.

And, if you are like me, it might make you cry.

Okay, I didn't cry, but I almost did.

As it turns out, these stones aren't thick enough to withstand the rigors of frequent use. You need to use a stone that is at least 1/2 inch thick.

After the tragedy, I ran out this afternoon and bought a proper stone at Williams Sonoma, but they are available at King Arthur and Amazon (for more $$$ and require shipping and waiting and
I don't like to wait)

I can't think of anything more therapeutic than the smell of fresh-baked bread wafting through the house.

So, tonight I am making pizza and baking it on the new stone that has taken up residence in our oven. And there was happiness throughout the land.

And pizza.

Where there's smoke, there's pizza?
